Banana ice-cream

  • Ripe bananas, frozen

Optional added flavours (just a few of the MANY possibilities!):

  • Cinnamon
  • Coconut milk
  • Cream
  • Strong brewed coffee
  • Cocoa
  • Mint
  • Blueberries
  • Strawberries
  • Nuts – raw or toasted
  • Chocolate chips
  • Grated or crystallised ginger

To prepare your bananas, peel them and break them up into chunks. Freeze them in a freezer bag until you need them.

When you’re ready to make your ice-cream, place as much of the frozen banana as you want in a bowl or stand-alone blender. Blend until it’s fluffy, with a similar texture to regular soft-serve ice-cream.

If you’re adding other flavours, add them now and blend them in.

Serve immediately or put in the freezer to serve later.

If you freeze it, beat it with a fork every half-hour or so, for the first couple of hours, to break up the ice crystals and keep the texture light, before putting it back in the freezer. If you leave it till it’s solid, you may want to take it out 5 – 10 mins before serving to soften slightly.

Serve with whatever garnishes you choose – chocolate sprinkles, mint, nuts, etc.
